INGREDIENTS
2 tbsp olive oil
1 lb extra firm tofu
1 28-oz can peeled whole tomatoes, roughly chopped
2 tbsp curry powder
2 tbsp basil
6 cups brown rice, cooked
PREPARATION
Heat oil to medium-low in a large skillet. Add tofu and sauté 1 to 2 minutes. Add tomatoes, curry, and basil, mixing gently with tofu until completely combined.
Place 1 ½ cups rice in each of four large bowls. Layer ¼ of tofu and tomatoes on top of each bowl and serve.
