INGREDIENTS
1 ½ lbs boneless turkey cutlets, pounded thin
1 cup bread crumbs
1 tbsp kosher salt
½ tsp black pepper
2 tbsp dried oregano
2 beaten eggs
1/3 cup fresh parsley, finely chopped
4 tbsp canola oil
4 cups green beans
Salt and pepper
PREPARATION
Beat eggs and add parsley.
In large bowl, combine bread crumbs, salt, pepper, and oregano.
Dredge turkey cutlets in the egg wash and then dredge in the bread crumb mixture. Pat excess bread crumbs off and fry on medium heat in canola oil, approximately 10 minutes.
While turkey is cooking, place green beans in a microwave-safe container with about 2 tablespoons water and cover bowl with damp paper towel. Microwave approximately 3 minutes, or until desired tenderness.
When done, season with salt and pepper and serve alongside turkey cutlets.
