INGREDIENTS
10 oz lamb steak, cubed
2 tbsp flour
1 tbsp vegetable oil
½ medium onion, diced
1 carrot, diced
1 celery stalk, diced
1 medium russet potato, cubed to ¾-inch size
1 clove garlic, minced
½ tsp dried thyme
½ cup red wine
1 cup water (divided in two)
Salt and pepper to taste
PREPARATION
Cube lamb steak and dredge in flour seasoned with salt and pepper.
Add vegetable oil to a 4-quart saucepan and heat on high. Add lamb and brown, approximately five minutes.
Add onion, carrot, celery, and garlic and cook for five minutes. Pour in red wine to deglaze the pan. Add ½ cup of water and lower heat to medium. Add potato and another ½ cup of water and cook for five minutes. Reduce heat to low and cook covered for another 15 minutes.
Serve equal portions in two bowls.
