Easy Cajun-Style Jambalaya

This traditional Louisiana jambalaya dish is usually made with the “trinity” of celery, bell peppers, and onion. This high protein savory version omits the celery but includes spicy sausage along with juicy chicken and shrimp, making for a delicious, filling dinner.

INGREDIENTS

¼ lb spicy Italian sausage

Nonstick spray

1 ¼ lb boneless skinless chicken breast, uncooked, diced

1 lb large raw shrimp, peeled, deveined

½ cup diced red pepper

½ cup diced onion

Salt and pepper

1 ½ cups beef broth

1 cup rice

PREPARATION

Brown sausage on medium in large pot. Set aside.
Add nonstick spray and chicken to same pot, mixing occasionally.
Add salt and pepper to taste.
Remove sausage from pot, cut into ¼ inch rounds, and place back in pot with chicken.
Add shrimp, red pepper, and onions, and cook approximately 3 minutes, stirring occasionally.
Add beef broth and rice. Bring to simmer, stirring occasionally, and reduce heat.
Cover and cook on low for approximately 30 minutes or until rice reaches desired texture.
Add additional salt and pepper as necessary.
